Get ready to embrace the spirit of the holidays around the dinner table this season as celebrity chef Bryan Nagao presents tantalising new menus at his flagship Hong Kong restaurant, TOWN by Bryan Nagao.perfect to gift to friends and loved ones.

The decadent 6-course Christmas menu at Town starts with Chef Nagao’s Japanese-inspired twist on steak carpaccio: the “Pipikaula” Uni:
Pipikaula is a Steack carpaccio with sea Asparagus, Yuzu Kosho, with thinly sliced Rangers Valley Wagyu Sirloin in a tart white soy, wasabi and sake kasu glaze, served with tamago and uni.
Meat lovers will fall for the divine Australian Roasted Quail, marinated in sherry wine and served with a smoky eggplant puree, white wine-simmered watermelon and chicken broth; and the “Maruya” Tenderloin, Foie Gras, Preserved Matsutake, which gets seared on the binchotan grill, topped off with foie gras and a ragout of last season’s pickled wild mushrooms.
Seafood fans, meanwhile, can indulge in the Lobster “Blue” White Asparagus, Pomelo-Cucumber, Onion Dashi: a tender butter poached-lobster tail served with a tart relish and white asparagus puree in another ode to a rare and prized ingredient.

For a sweet ending, the “Mont Blanc” Black Currant Jam, Vanilla Chestnut Cream Meringue delivers with the traditional dessert of pureed chestnuts lightened with meringue and a refreshing black currant sorbet.
